Ingredients
500gms Gambledown Farm grass fed lamb mince
fresh or dried oregano 2 tspns
1 tspn smoked paprika
1 tspn ground cumin
zest of 1 lemon
flatbreads
plain yoghurt
harissa paste
Method
Place mince in a large glass bowl add the spices, some ground pepper, salt and the herbs
Mix together with your hands
Soak some kebab sticks in cold water for 10 minutes
Then form lamb mince around the kebab stick, squeezing so that the mince is compact
Place the kebab sticks with monce on a plate, cover with cling film, place in the fridge and chill for 1/2 an hour or longer if you have time
Heat the bbq and cook the kebabs over the bbq ensuring the meat is cooked through. The kebabs should be turned a few times using bbq tongs to ensure even cooking
Take mince off the skewer and place into a flatbread, with salad, yoghurt, a dollop of harrissa paste & enjoy
